Strawberry Kiwi No-Bake Cheesecake – A Slice of Fruity Heaven!

1 ½ cups graham cracker crumbs

¼ cup granulated sugar

½ cup melted butter (unsalted)

For the Cheesecake Filling:

16 oz (450g) cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

1 ½ cups whipped cream or whipped topping

1 cup chopped fresh strawberries

For the Fruit Topping:

34 kiwis, thinly sliced

Whole strawberries, halved

1 packet (3 oz) unflavored clear gelatin

1 cup water

2 tbsp sugar

Instructions

  1. Prepare the crust: Combine graham cracker crumbs, sugar, and melted butter. Press firmly into the base of a springform pan. Chill in the fridge for 15 minutes.

  2. Make the filling: Beat cream cheese until smooth. Add powdered sugar and vanilla. Fold in whipped cream and chopped strawberries. Spread evenly over the crust and refrigerate for 4 hours or until firm.

  3. Prepare gelatin topping: In a saucepan, heat water and sugar until sugar dissolves. Stir in gelatin and mix until fully dissolved. Cool slightly.

  4. Arrange the fruit: Decoratively place kiwi slices and strawberry halves on top of the chilled cheesecake.

  5. Pour and set gelatin: Gently pour the cooled gelatin over the fruit. Refrigerate for another 2–3 hours until set.
